99 Cones With Flakes. (Recipe time)

I love these because I feel like a child when I eat them. I found this recipe on Cookie Girl's book 'EAT ME!'
I hope you enjoy it as much as I did!

Ingredients:

12 flat-based ice cream cones
110 g/4oz unsalted butter, room temperature
110g/4oz caster sugar
3 large eggs
110g/4oz self-raising flour
1tsp baking powder
1tsp vanilla extract
4 chocolate flakes, cut into 3

For the icing:
225g/8oz unsalted butter, room temperature
450g/1lb icing sugar, sifted
2 tsp vanilla extract


Preparation:

1. Preheat the onven to 180C/ 350 F/ Gas 4.
Cut 12 squares of foil, each measuring 15 cm/6in, and press them into 12 regular muffin tin holes, letting the foil hang over the edges. Place an ice-cream cone in each piece of foil and wrap the foil around the cone to hold it in place.

2. Cream the butter and sugar together until pale and fluffy. Beat in the eggs, one at a time, until well incorporated. Sift the flour and baking powder together and add this a third at a time to the batter. Add the vanilla extract.

3.Spoon the mixture into the cones, filling to just below the top of the cone. Place in the centre of the oven and bake for about 20 min so that the cakes are springy to the touch and a skewer inserted into the centre comes out clean. Place on a wire rack and leave to cool.

4. Make the icing. Beat the butter so that it is pale and creamy and add the icing sugar and the vanilla.

5. Using a piping bag with a star-shapped nozzle, pipe the icing onto the cupcakes to create a Mr Whippy effect. Add a chocolate flake to each one.
