Watermelon and Tequila Agua Fresca!

Sadly for us londoners, the weather has been terrible. It makes me sad to think about all of those lucky enough to escape for a few days to 'Paradise Beach'.. suckers..
For us who have to stay, I have found a delish recipe with two of my favourite things: Watermelon and Tequila.
Agua fresca is the Spanish term for 'Fresh Water' and as the name describes it, it is cold water with fruit juices.
Follow this recipe and enjoy. If we are lucky the weather might improve andwho knows, you can get your relatives drunk at a Sunday BBQ, or if you are on holiday, go to the nearest supermarket, plus I am sure you can find better watermelons anywhere but England!

 Ingredients:

1 small seedless watermelon
8 cups water
1 1/2 cups of sugar
1 ounce of fresh lime juice
Pinch of salt
Ice Cubes
6 Shots Blanco Tequila

Preparation:

Cut watermelon into quarters and place in the blender. Add 1/2 cup of water to the blender to avoid clogging, and scoop the flesh of two of the watermelon quarters into the blender.
Add half of the sugar and half of the lime juice and blend until smooth.
Pour the puree into a 1 gallon jar or punch bowl. Add another 1/2 cup of water along with the remaining watermelon flesh, sugar and lime juice to the blender and blend again.

Add the remaining 7 cups of water to the punch and stir well to dissolve the sugar. Ladle into 6 ice-filled glasses. Top each glass off with a shot of Tequila.
Stir and serve.
