This song is not that old, or that new. It just floats. Ironically, I saw Vampire Weekend playing in the winter so I never realised the potential this song has for sunny days.

Strawberry Crumb Cupcakes

First of all, apologies in advance for my bad pics. I was so caught up in making sure it was all perfect (to my standards) that my photos turned out as if they were taken by a 3 year old. Sorry :P



So here is the recipe for the Strawberry Crumb Cupcakes. They are simple to make, super tasty and well, the crumb is just out of this world. The recipe is from the EAT ME book by Cookie Girl.

Ingredients




Base


12 digestive biscuits
2tsp demerara sugar
110g/4oz butter, melted

Cakes


110g/4oz unsalted butter, room temp
110g/4oz caster sugar
2 large eggs
110g/4oz self-raising flour
1tsp baking powder
1tsp vanilla extract

Filling


400g/14oz strawberries
12tbsp sugar
2tbsp water


Icing

55g/2oz unsalted butter room temp
55g/2oz cream cheese room temp
225g/8oz icing sugar

Preparation


Preheat oven to 180C/350F/Gas 4
Line muffin trays with paper cases. After, put the digestives in a plastic bag and crush until fine. Put them in a bowl, stir in the demerara sugar, then the melted butter and mix well. Press firmly into the base of each paper case.
To make cakes, cream the butter and sugar together until fluffy. Add the eggs, then the flour, baking powder and vanilla. Drop 1 generous tablespoon of mixture onto the crumb base in each case and bake for 20 minutes. Cool on a wire rack.

To make the jam filling, (which is simple as anything), put the strawberries, sugar and water into a pan and gently bring to the boil. It says 2tbsp of water, and that is more than enough. The strawberries will release their own juice and sweetness. Turn down heat and simmer for 3-4 min. Stir occasionally, taking care that the mixture doesn't burn. Remove from the heat and leave to cool slightly. Remove the centre of each cake with a small knife or an apple corer and fill with a teaspoon of the 'jam' you have just made.

To make the icing, whisk the butter with the cream cheese and icing sugar. Add enough of the remaining jam to make a pleasing colour and use this to ice the cakes.

A Book for modern times..

I am having a moment.  There is something really annoying about not finding suitable books to read. Not only to read, but just in general.. it seems impossible to find a good coffee table book that hasn't been seen everywhere, or that you haven't scanned for the 100th time... Or maybe it's just me..


So, have you ever been singing in the shower, so loudly that the walls are starting to shake a little, but then.. you forget the lyrics??!
Well, the Shower Songbook is exactly that, a book where you can put all your favourite lyrics and sing along. No more forgetting, and the best part is that it's obviously water proof, so it will make showers a good laugh and not just a daily affair.





Humans are collectors. I believe it's part of human nature.. Not in a hoarding kind of way, but in a good way, like people who collect stamps, or coins, or even Hello Kitty stuff... lolz
A Collection a Day is well, a book full of pretty pictures of things that people collect. I recommend it because it's fun to look at and it brings lots of interesting conversation topics. Coffee table fo shooooo.




Fifty Dresses that changed the world. Girls, this is for all of us.





A book about food is always a good book. The Geometry of Pasta is an excellent source to learn how to cook and eat pasta like a true Italian.



As you can see, my options are varied as usual, but a good coffee table book can be the beginning of a new friendship or a new opportunity. You never know who you might meet while looking through a book... (Yeah right).

Tough Mudders 2012

With better weather come better outdoors activities. This year, Tough Mudders is back once again with even more challenges and adventures.
For those who have never heard of Tough Mudders, then here's a brief synopsis. Designed by the British Special Forces, it aims to test strength and mental grit. So, do you have what it takes?

The challenge consists of 10-12 mile obstacles, from crawling in mud, to climbing walls and even some sort of electric shots while crawling??? I don't really know the drill, but this will definitely get the adrenaline pumping.

Tough Mudders is not only popular in the UK, but it also has a huge fan base in the Netherlands of course, and the USA. Ha, those Netherlands peeps do love their extreme sports don't they?! Lolz..









For those of you who enjoy doing crazy things and testing your own limits, this might be the right path...

I know this is not super new and whatevs, but today I truly felt like dancing on top of my bed with this song. Maybe Sun combined with a nice Monday makes all the difference.
I am obsessed with this song, so much that I play it at least three times daily. Freaky...
I guess I see myself in a very CIA outfit (sexy secretary), intercepting a nasty ex in a club, spiking his drink with some pixie dust and then just run away in my Louboutins...

St. Patrick's Day Parade!

This year, I'm celebrating Irish style! On Sunday 18th March, Saint Patrick's Day parade will be taking place at Hyde Park. A big  marching band along with St. Patrick himself, will be 'parading' all the way to Whitehall.
There's going to be live music in Trafalgar Square, and some of the best Irish acts will be there. Ram's Pocket Radio and Gemma Hayes will be rocking the house while fellow attendees drink and dance.

There are plenty of activities going on during the day, however, I decided to compile a list of nearby pubs. The reason is, the Irish Post wants your opinion on which pub has the best pint of Guinness in Britain. St Patrick's Day seems like the best time to make new friends, have a drink, follow some tradition and drink some Guinness. :P

Speaking of summer and music festivals, I must admit my concerns towards the weather. I mean, is it a practical joke or something? Let's make it sunny for a couple of days, only to suddenly destroy humans' happiness with showers of rain and freezing wind.... nah, it's just standard London...

However, I am still doing what every other girl does, which is preparing for a summer that might never come. It's like forcing new trends even though the weather doesn't agree.

LOVEBOX 2012

It's 10 years of LOVEBOX already! Although I am not happy that Lana del Rey is joining the line up, I am still buying a ticket or two.. it all depends on budget lolz.

So, what is happening this year at Lovebox? Victoria park will be filled by drunk music enthusiasts to enjoy a weekend of beats and pop culture.

This year's lineup is incredible. Emeli Sande will be there of course, along with fellow female singer Kelis and Azealia Banks. Other acts include Hot Chip, Friendly Fires, Little Dragon, Crystal Castles and The Rapture.

Yikes! Can't wait.. let's hope the weather gets betteeeerrrrrr
